Recipe: Chocolate Orange Bundt Cake

To become a master of baking… Santa obviously read my resolutions and brought me the book of SIMPLE chocolate recipes (Simply Chocolate,Love Food). It actually works! It is simple and it tastes good so I decided to share the recipe for an easy-to-make-pretty-tasty-sweet-chocolate-and-juicy-orange-cake:

Ingredients:

  • 2 small oranges
  • 85g of semisweet chocolate
  • 1 2/3 (200g)  cups self-rising flour
  • 1 1/2 tsp baking powder
  • 3/4 cup (170g) butter, softened + extra for greasing
  • 1 cup (225g) superfine sugar
  • 3 eggs, beaten

Ingredients for topping:

  • 1 1/2 cups (180g) icing sugar
  • 2 tbsp orange juice
  • 55g semisweet chocolate

Step 1: Preheat the oven to 160C and grease a bundt pan (shape for potica).

Step 2: Grate the peel of one orange and set aside. Neatly peel  the other orange (so you get nice diamond shapes) and set aside. Cut the skin and all other unnecessary elements from the orange and cut the orange itself into small pieces, reserving as much juice as possible. Grate the chocolate.

Step 3: Sift the flour and baking powder into a bowl. Add the butter, sugar, eggs and grated orange peel. Beat until the batter is smooth. Fold in the chopped oranges and grated chocolate and spoon the batter into the prepared pan. Bake in the preheated oven for about 40 min.

Step 4: To make the topping, sift the icing sugar into a bowl and stir in enough orange juice to make a coating consistency. Drizzle over the cake. Melt the chocolate and drizzle it over the cake as well. Cut the reserved orange peels into thin strips and scatter over the cake.

Step 5: Eat.

Please note: the picture of the cake was taken from the internet. My cake (unfortunately) fell apart and was therefore not suitable for photoshooting… It still tasted good though 🙂
